Quick Vegan Dessert

So I was challenged to come up with a quick and easy vegan dessert with things that I had to hand, and here it is!

It took less than 4 mins to prepare and it went down a storm.

What is it?

Well I have yet to name it but here are the instructions.

2 ginger biscuits per person ( not all ginger biscuits are vegan)

Peanut butter

Fresh or frozen fruit

tiny amount of suger

Soya yogurt.

First sandwich the biscuits together with the peanut butter.

I used frozen blackberries for mine, but raspberries, would work equally well as would cherries or stewed rhubarb ( a big fave in my house).

Put the frozen berries in the microwave to defrost with some sugar, this will make a syrupy sauce.

If using fresh berries, give them a quick zap of the microwave just to warm them through. They should release some juice too.

You could use tinned berries if you like them better, but warm them through too.

Pour the warm fruit over the biscuit and add soya yogurt.

Easy peasy and very tasty too.
