Since becoming a vegan, chick peas have become my greatest friend.

 

I have used them in to make curries and falafel and a whole host of various flavoured, chick pea patties.

 

Above is my favourite weekend lunch, chick pea patties ( with a 'splodge' of hummus) stuffed mushrooms, sweet potato chips, red cabbage coleslaw with  vegan mayo,  home made guacamole, salad and olives.

Very yummy and very filling and the flavour of the patties changes every time I make them.

 

So the basic mix is

 

400g tin of chick peas, drained and rinsed and allowed to dry.

 

any left over veg ( sweetcorn, peas green beans, mushroom onion)

 

1 tbsp. plain flour

 

 glug of olive or vegetable oil ( or coconut oil ).

 

Sea salt and Black pepper

 

Flavourings of choice. I have used over the time

 

Harissa

 

Chilli and lime ( juice and rind)

 

Cumin and Coriander

 

Mild curry powder

 

Garlic and chilli

 

 

The variations are endless.

 

 

how to prepare

 

 

Sautee the left over veg ( or freshly prepared if you prefer)

 

mash the chick peas in a bowl  ( or whiz in the food processer)

Mix all together and add the flavouring.

 

Add the flour and mix well.

Put some oil  in the mix until all bound together.

 

Wrap in cling film and put into the fridge for an hour or so.

 

Remove and cut and form into patties.

 

cook in a non stick frying pan  for approx. 5-8 minutes each side or until they are to your liking.

 

 

You can serve in bun or on a plate with a whole host of other goodies just like me!!!
